How to Make Amazing Gluten Free Pumpkin Oatmeal Cookies

This is one of my favorite pumpkin recipes, and it's perfect for beginning bakers!

Vegan buttery spread

Sugar and brown sugar

Gluten free flour + oats

Baking soda, baking powder, salt

Pumpkin Puree

Chocolate chips

Ingredients

Step 1

Cream the vegan buttery spread and sugars until light and fluffy.

Step 2

Add the pumpkin puree and continue to mix until combined.

Step 3

Add the dry ingredients - GF flour, spices, baking soda, and the GF oats. Be sure to use certified gluten free oats.

Step 4

Scoop the oatmeal cookie dough on the baking sheet. Leave about an inch between cookies since they will spread during baking.

Step 5

Bake the cookies at 350 degrees for 12-14 minutes. Be sure to allow the cookies to cool down before moving them.
