Zucchini Squash

Zucchini are plentiful in the summer months. Adding shredded zucchini to cake or muffins creates very moist, rich baked goods.

These muffins are moist, rich, and so super chocolatey! No one ever guesses that these treats are vegan.

Prep Time: 15 Min

– 1 ½ cups flour – ½ cup cocoa powder – ½ cup brown sugar  – ½ cup organic cane sugar – 1 teaspoon baking soda – ½ teaspoon salt – 1 cup grated zucchini  – 2 Tablespoons applesauce – 1 ⅛ cups water – ¼ cup vegan buttery spread – ⅓ cup dairy free chocolate chunks

Step 1

Grate the zucchini, and squeeze out any excess liquid. If it's too wet, it will make the muffins soggy.

Whisk together the dry ingredients, then add the vegan buttery spread, unsweetened applesauce, and water.

Gently stir in the shredded zucchini. Add the dairy free chocolate chunks if desired.

Spoon the batter into a muffin pan that is lined with parchment liners. Top each muffin with more chocolate chunks!

Bake the muffins at 350 degrees F for about 20 minutes. Let them cool in the pan somewhat before gently removing them.
