Vegan Berry Crisp Bars

If you've been blueberry picking, chances are you're in the mood for a quick and easy berry dessert! This is the one you're looking for.

 – 2 ¼ cups certified gluten free oats – ½ cup gluten free flour blend - all purpose flour works as well – ¾ cup light brown sugar – 1 cup vegan buttery spread – 2 cups blueberries, fresh or frozen

TIP: Lining the pan with parchment paper makes clean up easier! It also helps prevent baked goods from sticking to the pan.

Step 1

Put the gluten free oats, gluten free flour blend, butter, and sugar in a bowl and mix together with a pastry blender.

Step 2

Press half of the oat mixture into a square pan that has been lined with parchment. Bake the bottom layer for 15 minutes at 375 degrees.

After the bottom crust finishes baking, put the blueberries on top. It's okay to use fresh or frozen berries.

Step 4

Put the other half of the oat mixture on top of the berries. Press it down with your hands.

Step 5

Bake at 375 degrees F for about 25 minutes. Allow the bars to cool completely if you would like to slice them into neat squares.
