Place the sliced carrots in a pot with about 2 cups of water. Simmer the carrots until they are tender - about 10 minutes.
Melt the buttery spread in a sauce pan over medium heat.
Add the sugar and salt. Stir until sugar is melted. Add the carrots and stir until the carrots are coated with the glaze. (You may want to add half the sugar and then adjust the amount according to your taste).
Serve with more salt if desired. Top with fresh herbs if you like.
Notes
Store leftovers in an airtight container in the refrigerator. They should stay fresh for about 4-5 days.
