Caramelized Onion White Bean Dip.

Creamy white beans and sweet caramelized onions combine to make the perfect dip for parties! This is delicious with crackers, toasted bread, or fresh vegetables.

Ingredients
  

  • 2 ½ Tablespoons olive oil
  • 2 sweet onions or one extra large sweet onion
  • 15 ounces Great Northern beans or white cannellini beans, or navy beans
  • 2 Tablespoons lemon juice or apple cider vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Peel and slice the onions, then place them in a heavy bottomed pot along with one tablespoon of olive oil.
  • Cook over medium low heat, stirring frequently. Don't rush the process - it will take about 25-30 minutes for the onions to caramelize.
  • Once the onions are golden brown, remove from the heat.
  • Drain and rinse the white beans and place in the food processor. Add two-thirds of the caramelized onions, the remaining olive oil, lemon juice, garlic powder, salt, and pepper. Process on high speed until smooth and creamy.
  • Spoon the dip into a bowl and top with the remaining caramelized onions. Drizzle a bit more olive oil on top if desired.
  • Serve with your favorite chips, crackers, or raw vegetables.

Notes

Store leftovers in the refrigerator. They should stay fresh for about 4 days.
