Cheesy Hamburger Rice Casserole (Gluten Free, Dairy Free).

Ingredients
 
 

  • 1 cup chopped onion
  • 1 green pepper chopped
  • 3 garlic cloves minced
  • 2 Tablespoons olive oil
  • 1 pound ground round or ground turkey
  • 2 ½ cups chicken broth
  • ¾ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • 1 teaspoon salt
  • teaspoon pepper
  • 3 cups cooked white rice I used Jasmine rice. Use any rice you like.
  • ½ cup dairy free cheese of your choice
  • 1 ½ cups gluten free garlic breadcrumbs

Instructions
 

  • Preheat oven to 375 degrees F.
  • In a skillet, cook the chopped onion, chopped green pepper, minced garlic, and ground round in the olive oil. Cook over medium heat until the meat is browned and cooked through.
  • Add the cooked rice, chicken broth, dairy free cheese, and seasonings, and stir.
  • Spoon the mixture into a 9x13 casserole dish, then cover with foil and bake at 375 degrees F for 35 minutes.
  • While the casserole is baking, you can make your garlic breadcrumbs if you are doing that from scratch.
  • After 35 minutes, remove the foil and sprinkle the breadcrumbs on top of the casserole. Bake for another 10 minutes.
  • Allow to cool slightly, then enjoy!

Notes

Note: You do need to cook the rice before you start this casserole. You can use pre-cooked rice from the store, or make your rice ahead of time on the stove or in a rice cooker.
Store leftover casserole in an airtight container in the refrigerator.
Instead of breadcrumbs, you could use crushed potato chips or gluten free crackers.
If you don't have a safe brand of dairy free cheese, you can leave that out. This dish will still taste good without the cheese.
