Instructions
Make the taco seasoning:
Mix all spices together in a little glass jar and set aside. You can double the recipe if you want to, so that you have more for later. Just keep it sealed so it stays fresh!
Make the sauteed veggies:
Put the olive oil, sliced onions, and sliced peppers in a small pan. Cook over medium heat until the veggies are tender, about 15 minutes.
Make the tacos:
While the veggies are cooking, you can make the chicken. Place the chicken breasts in a heavy bottomed sauce pan and cover with water, or chicken broth if you prefer.
Bring to a boil, then reduce heat to a simmer. Simmer for about 20 minutes, or until cooked through. Check the temperature with a meat thermometer - it should reach 165 degrees F.
Let the chicken cool, then drain most of the liquid out of the pan. Shred the chicken and place back in the pan. Add the 3 Tablespoons of taco seasoning and 2 tablespoons of water. Stir and cook over low heat for about 5 minutes.
Spoon the chicken into taco shells. Top with the cooked veggies and any other toppings you desire, such as salsa, lettuce, or guacamole. Enjoy!
Notes
Store leftover taco meat in the refrigerator. It should stay fresh for about 3-4 days.Store any leftover taco seasoning in a small glass jar or a ziploc bag to keep it fresh.
