Instructions
Preheat the oven to 350 degrees F. Line a cookie sheet with parchment paper.
Cream the vegan buttery spread and sugars together in a mixing bowl.
Add the applesauce, and mix well.
Add the gluten free flour blend, cocoa powder, baking soda, and salt, and mix until combined.
Stir in the ¾ cup of dairy free dark chocolate chips.
Use a ¼ cup scoop to scoop the dough onto the cookie sheet. I was able to fit 5 cookies on the cookie sheet at a time.
Lightly flatten the dough with your hand, and press some of the remaining half cup of chocolate chips into each cookie.
Bake at 350 degrees F for 13-14 minutes. Don't over bake. Allow to cool on the pan before moving the cookies.
Repeat steps 6-8 with the remaining dough.
Notes
Store leftover cookies in an airtight container for up to 5 days.
