Curried Quinoa Salad with Fruit.

This quinoa salad is full of flavor from a curried dressing and berries, apples, and carrots. Make this and take it to a summertime barbecue or potluck!

Ingredients
 
 

For the salad:

  • 1 cup quinoa
  • ½ cup red onion chopped
  • 1 cups shredded carrots
  • 1 large apple chopped
  • 1 cup blueberries

For the dressing:

  • Cook the quinoa according to package directions. Once it's done cooking, set it aside to cool.
  • Put the quinoa, red onion, carrots, apple, and blueberries in a large bowl.
  • In a small glass jar, mix the olive oil, lemon juice, sugar, curry powder, salt, and pepper. Whisk until combined.
  • Pour the dressing over the other ingredients. Mix together until everything is covered in the dressing.
  • Refrigerate until ready to serve.

Notes

Store leftover salad in the refrigerator. It should stay fresh for about 4 days.
If you aren't going to eat this right away, I recommend storing the dressing separately from the salad, and adding it to the bowl right before serving.
