This quinoa salad is full of flavor from a curried dressing and berries, apples, and carrots. Make this and take it to a summertime barbecue or potluck!
Cook the quinoa according to package directions. Once it's done cooking, set it aside to cool.
Put the quinoa, red onion, carrots, apple, and blueberries in a large bowl.
In a small glass jar, mix the olive oil, lemon juice, sugar, curry powder, salt, and pepper. Whisk until combined.
Pour the dressing over the other ingredients. Mix together until everything is covered in the dressing.
Refrigerate until ready to serve.
Notes
Store leftover salad in the refrigerator. It should stay fresh for about 4 days.If you aren't going to eat this right away, I recommend storing the dressing separately from the salad, and adding it to the bowl right before serving.
