Quinoa salad is a perfect side dish in the summertime! This version is extra special with berries, apples, and a lightly sweetened curry dressing. You’ll love this!

One thing that I like about summer is all of the salad recipes. I love to make a big bowl of pasta salad, or quinoa salad, or potato salad and have it on hand for a couple of days. It makes lunchtime easier for me.
I have a few different quinoa salads on my site, but this one is extra nice in the summer, when blueberries are ripe and in season.
A slightly sweet, citrus-y, curried dressing is a nice addition to all the fruit in this salad. This is a great lunch option or a good side dish for a barbecue.

Ingredient Notes
- Quinoa – I used white quinoa in this recipe, but you could use a mix of red and white if you like.
- Apples – I like to make this with sweet apples, like Fuji or Envy apples.
- Blueberries – Blueberries are a nice touch of sweetness – if they aren’t in season, you could also use red grapes.
- Lemon Juice – Fresh lemon juice works best, but if you only have bottled lemon juice, that will be okay.
Step by Step Instructions
- Cook the quinoa according to the package directions, and set it aside to cool.

- Add the shredded carrots, chopped red onion, diced apples, and blueberries to the bowl.

- Put the lemon juice, sugar, olive oil, and spices in a small jar and whisk together.

- Pour the dressing over the other ingredients and stir well until everything is coated. Enjoy!

Variations
- You can use a different kind of citrus juice if you like – try orange juice or lime juice.
- Try adding some sunflower seeds to this dish for a little crunch!
- If you want to add more fruit, feel free to add some diced pear or even some dried cranberries.

Storage
Store leftover salad in the refrigerator. If you aren’t going to serve this right away, I would keep the dressing separate until you are ready to serve it. That way the quinoa won’t soak up all the dressing.

Curried Quinoa Salad with Fruit.
Ingredients
For the salad:
- 1 cup quinoa
- ½ cup red onion chopped
- 1 cups shredded carrots
- 1 large apple chopped
- 1 cup blueberries
For the dressing:
- ¼ cup olive oil
- 3 Tablespoons lemon juice
- 1 ½ Tablespoon sugar
- ½ Tablespoon curry powder
- ½ teaspoon salt
- ⅓ teaspoon pepper
Instructions
- Cook the quinoa according to package directions. Once it's done cooking, set it aside to cool.
- Put the quinoa, red onion, carrots, apple, and blueberries in a large bowl.
- In a small glass jar, mix the olive oil, lemon juice, sugar, curry powder, salt, and pepper. Whisk until combined.
- Pour the dressing over the other ingredients. Mix together until everything is covered in the dressing.
- Refrigerate until ready to serve.
