Gluten Free Chicken Fried Rice (Soy Free).

Ingredients
 
 

  • 1 cup uncooked rice
  • 1 Tablespoon olive oil
  • 1 small onion finely chopped
  • 1 cup frozen peas and carrots
  • 1 cup cooked chicken shredded
  • ¼ cup coconut aminos
  • 3 green onions chopped
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Prepare the rice according to package instructions.
  • When the rice is almost done cooking, place the olive oil and the chopped onions in a large skillet. Cook over medium heat the onion starts to soften. Add the peas and carrots and stir well. Cook for about 5-6 minutes, until the veggies are cooked through.
  • Stir in the rice, then add the chicken and coconut aminos. Add the salt and pepper. Stir to combine. Taste and add more coconut aminos if desired.
  • Once everything combined and warmed through, spoon into bowls and top with the chopped green onions. Enjoy!

Notes

If you can have soy, you can use tamari sauce if you like.
If you can't have onions, you could try scallions instead.
Store leftover fried rice in the refrigerator for up to three days. Be sure to reheat any leftover rice to steaming before eating.
