If you’re looking for a quick and easy dinner recipe, you need to try this gluten free chicken fried rice! It’s a flavorful, comforting recipe that comes together in no time.

When I haven’t been feeling well, I tend to crave simple, comforting food, like chicken noodle soup, or mashed potatoes, or dishes like this chicken fried rice.
There’s something about the combination of protein and starch that makes this fried rice taste extra good when I’m under the weather. Of course, I don’t wait until I’m sick to make this, though!
We make this easy dinner often at our house. If you have leftover chicken or rice, this is a good way to use them up!

Ingredient Notes
- Chicken – Use any cooked chicken that works for you! You can make your own chicken breasts and shred them, or use canned chicken, or even a rotisserie chicken if that works for your dietary needs.
- Rice – I like to use long grain white rice in this dish. If you have leftover rice, you can use that. Otherwise, just make the rice according to the directions on the package.
- Veggies – Onions, peas, and carrots are what I typically use in this recipe. You can add more veggies if you like!
- Coconut Aminos – Coconut aminos taste like soy sauce, but without the soy. You can find them at most health food stores.

Substitutions
- Feel free to use a different protein if you prefer- this could also be very good with pork or even leftover turkey.
- Use any type of rice that you like. You could even make this with cauliflower rice.
- If you are able to have soy, you can use tamari sauce instead of coconut aminos if you prefer.
- If you like different vegetables, go ahead and add them! Cabbage could work well, or broccoli or thinly sliced peppers.
Step by Step Instructions
- Cook the rice according to package instructions.

- Cook the onions, peas, and carrots in olive oil. When the rice is done cooking, add it to the skillet.

- Add the coconut aminos, chicken, salt, and pepper to the skillet, and cook until everything is warmed through.

- Spoon into bowls and top with chopped green onions. Enjoy!

Gluten Free Chicken Fried Rice (Soy Free).
This is a simple dish that's tasty and comforting! Chicken fried rice is perfect for busy nights.
Ingredients
- 1 cup uncooked rice
- 1 Tablespoon olive oil
- 1 small onion finely chopped
- 1 cup frozen peas and carrots
- 1 cup cooked chicken shredded
- ¼ cup coconut aminos
- 3 green onions chopped
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Prepare the rice according to package instructions.
- When the rice is almost done cooking, place the olive oil and the chopped onions in a large skillet. Cook over medium heat the onion starts to soften. Add the peas and carrots and stir well. Cook for about 5-6 minutes, until the veggies are cooked through.
- Stir in the rice, then add the chicken and coconut aminos. Add the salt and pepper. Stir to combine. Taste and add more coconut aminos if desired.
- Once everything combined and warmed through, spoon into bowls and top with the chopped green onions. Enjoy!
Notes
If you can have soy, you can use tamari sauce if you like.
If you can’t have onions, you could try scallions instead.
Store leftover fried rice in the refrigerator for up to three days. Be sure to reheat any leftover rice to steaming before eating.
