This pumpkin spiced snack mix is just right for fall! Crunchy, and spiced with cinnamon, you won't want to stop eating this.

Ingredients
  

  • cup vegan buttery spread
  • 5 Tablespoons light brown sugar
  • 1 ¾ teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 5 cups rice Chex
  • 5 cups corn Chex

Instructions
 

  • Preheat the oven to 250 degrees F. Line a rimmed baking sheet with parchment paper.
  • Place the vegan buttery spread in a microwave safe bowl and heat for about 30 seconds or until melted. Pour it into a very large bowl.
  • Add the cinnamon, ground ginger, 4 tablespoons of brown sugar, and vanilla extract to the vegan buttery spread. Set one tablespoon of brown sugar aside.
  • Add the chex cereal to the buttery spread mixture. Use a large spoon to stir until everything is coated.
  • Spread the chex mix out evenly on the baking sheet. Sprinkle the remaining tablespoon of brown sugar on top.
  • Bake at 250 degrees F for about 50 minutes, stirring occasionally.
  • Remove from the oven and allow to cool before eating.

Notes

Serving size is about ¾ cup.
Store leftovers in a ziploc bag or airtight container. This should stay fresh for about one week.
