Simple Meatballs (Gluten Free, Dairy Free).

Ingredients
 
 

  • cup gluten free bread crumbs You can just crumble up whatever gluten free bread works for your diet
  • ½ cup sweet onion finely chopped
  • 2 cloves garlic minced
  • 1 pound ground round 85% lean
  • 1 pound ground pork
  • 1 ¼ teaspoons salt
  • ½ teaspoon pepper
  • 2 teaspoons Italian seasoning
  • ½ teaspoon red pepper flakes optional
  • ½ teaspoon garlic powder

Instructions
 

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Place the bread crumbs, meats, onion, garlic, and spices in a bowl.
  • Use your hands to mix together thoroughly,
  • Roll the meatballs into balls that are one and half inches in diameter.
  • Place on the prepared baking sheet.
  • Bake at 400 degrees F for 25-30 minutes, until they are browned and the temperature reads 165 degrees F in the middle.
  • Serve with your choice of pasta and sauce.

Notes

Serving size is about 5 meatballs.
Store leftovers in the fridge - they should stay fresh for about 3 days.
