I think one of the secrets to delicious gluten free meatballs that stay moist is to use two different kinds of meat – ground pork and ground beef. These meats add a lot of flavor and enough fat to keep the meatballs from drying out.

Ingredient Notes
- Ground Meat – You will want to get 85/15 ground beef for this recipe. Any leaner than that will result in a drier meatball. You can use plain ground pork or Italian seasoned ground pork – use the brand that works for your dietary needs.
- Bread Crumbs – Use any brand of gluten free bread that works for your diet. If you aren’t gluten free, use any brand of regular bread that you like. If there isn’t a safe option for bread for you, you could substitute some mashed potato instead.
- Onions – I like sweet onions in this recipe – they aren’t overpowering.
Step by Step Instructions
- Place the bread crumbs, ground pork, ground beef, diced onion, and spices in a bowl.

- Use your hands to thoroughly mix together.

- Roll the mixture into one and a half inch balls, and place on a rimmed baking sheet that has been lined with parchment.

- Bake at 400 degrees F for 25-28 minutes.

- Serve with your favorite pasta and homemade marinara sauce.

Simple Meatballs (Gluten Free, Dairy Free).
Ingredients
- â…” cup gluten free bread crumbs You can just crumble up whatever gluten free bread works for your diet
- ½ cup sweet onion finely chopped
- 2 cloves garlic minced
- 1 pound ground round 85% lean
- 1 pound ground pork
- 1 ¼ teaspoons salt
- ½ teaspoon pepper
- 2 teaspoons Italian seasoning
- ½ teaspoon red pepper flakes optional
- ½ teaspoon garlic powder
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Place the bread crumbs, meats, onion, garlic, and spices in a bowl.
- Use your hands to mix together thoroughly,
- Roll the meatballs into balls that are one and half inches in diameter.
- Place on the prepared baking sheet.
- Bake at 400 degrees F for 25-30 minutes, until they are browned and the temperature reads 165 degrees F in the middle.
- Serve with your choice of pasta and sauce.
