Happy July 3rd! Are you in vacation mode yet? Do you have plans? Do you need an easy and refreshing drink recipe?
Here are my answers: Yes, I am in vacation mode – I am so ready to just relax and do fun summer stuff for the next three days. Yes, we have plans for parades and barbecues. And YES, I can always use another idea for a pretty and summery drink!
As you can probably tell from the recipes that I share, I’m not a fan of complicated things. I like recipes that are simple and require minimal time in the kitchen, but that have a big impact. This refreshing watermelon berry fizz fits the bill.
It just requires a watermelon, some strawberry Italian soda, and some blueberries. Oh, and ice, preferably Sonic ice. Do you know about this? That you can go to Sonic and buy a bag of their ice for a buck fifty?
You may wonder why you would want to do that, and let me just tell you – Sonic ice is the best. I don’t even eat there, but I found out about their ice and I’m addicted. It’s like hospital ice. (If you’ve ever spent any time in a hospital you know that hospital ice > than any other ice).
That’s my pro tip for today – buy ice from Sonic, you won’t be sorry.
- 16 cups watermelon about half of a watermelon
- 16 ounces Strawberry Sparkling Mineral Water
- 3/4 cup blueberries
- Cut the watermelon into chunks and puree in batches in the blender. Strain the watermelon with a fine mesh strainer, pushing on the pulp with the back of a spoon to remove all the juice. Discard pulp.
- Pour watermelon juice and strawberry mineral water into a pitcher. Serve each drink over ice with a few blueberries in each glass.
