Meal planning can be difficult, especially at a busy time of year. When the holidays hit, or it’s back to school season, or you have a new baby, it can be really tough to plan ahead to have delicious homemade meals on the table.
When I know we are going to have a busy month, I start to think ahead to what we are going to eat, especially for dinner. If you’re like my family, and have any food allergies or sensitivities, you know that one of the challenges is not being able to rely on convenience foods.
Not that I want to eat out all the time, or buy a bunch of frozen dinners, or anything like that, but sometimes it would be nice to just be able to pick up the phone and order a pizza, you know?
So since ordering pizza isn’t something I can fall back on, I have to think ahead a little bit more. I know how I get when I’m stressed out and I want these next few weeks to be smooth sailing.
One thing that I have done in the past, and that I have found SO helpful, is to make crock pot freezer meals. Darryl is really helpful with the grocery shopping, so he did the big freezer meal shopping trip, and then we took a couple of hours and chopped and assembled all the ingredients to make a bunch of freezer meals.
Making gluten free dairy free crock pot freezer meals is such a great way to make sure that you are going to have a healthy meal ready to eat at the end of a long day. All you need to do is move the frozen meal to the refrigerator the day before to thaw so you can put it in the crock pot the next morning.

Some tips for preparing freezer meals:
- Use the ziploc freezer bags (these are heavier than the normal ziploc bags).
- If a recipe has a lot of liquid, consider doubling the bag to prevent leaks.
- Write the instructions on the bag with a Sharpie marker, as well as the date that you are putting it in the freezer.
- Potatoes may discolor in the freezer, so either make sure they are fully covered by the liquid (broth or sauce) in the bag, or wait to add those to the recipe until just before cooking.
