I mentioned on Monday that I had a crazy weekend, and whether I like it or not, the next three weeks are going to be even crazier. It’s a super busy time of year for musicians – there are a lot of gigs on my calendar, which is great, but that means that it gets a little bit chaotic for a few weeks before summertime.
One thing that freaks me out when I know we are going to have a busy few weeks is thinking about what we are going to eat, especially for dinner. If you have any food allergies or sensitivities, you know that one of the challenges is not being able to rely on convenience foods. Not that I want to eat out all the time, or buy a bunch of frozen dinners, or anything like that, but sometimes it would be nice to just be able to pick up the phone and order a pizza, you know?
So since ordering pizza isn’t something I can fall back on, I have to think ahead a little bit more. I know how I get when I’m stressed out and I want these next few weeks to be smooth sailing.
One thing that I have done in the past, and that I have found SO helpful, is to make crock pot freezer meals. Darryl is really helpful with the grocery shopping, so he did the big freezer meal shopping trip, and then we took a couple of hours and chopped and assembled all the ingredients to make a bunch of freezer meals.
Making crock pot freezer meals is such a great way to make sure that you are going to have a healthy meal ready to eat at the end of a long day. All you need to do is move the frozen meal to the refrigerator the day before to thaw so you can put it in the crock pot the next morning.
If you start searching on Pinterest for crock pot freezer meals, there are a TON of pins! It’s super overwhelming, and it’s hard to figure out where to start.
I’ve actually scoured the web for some crock pot freezer meal recipes that are gluten free and dairy free as well. (And actually, these are all also nut free and egg free, too!) I wanted to find recipes that look super tasty and use whole foods, so here are 20 that look good to me, and may make their way into our crock pot sometime in the future.
