Disclosure: As a member of the Healthy Aperture Blogger Network, I was asked to participate in the #iloveambrosia campaign. I was compensated for my time and gifted a dozen Ambrosia apples. As always, all opinions are my own.

I would say that apples are a staple in our house. I always have a bowl of them on the counter, and we often eat them with peanut butter as a snack. I also love to dice them up very small and put them on my oatmeal with some cinnamon sugar. When we think of pie in our house, we think of apple pie, because that’s our favorite.

An apple crumble tart….now that’s a dessert that’s worthy of a special occasion!
Ambrosia apples have bright pinkish red skin over a creamy background. Of course we sampled some right away, and we were blown away with how sweet and crisp they were! I had to remind Darryl that I needed to save some of these delicious apples for the recipe! The natural sweetness of these apples makes them ideal for desserts – you can reduce the amount of sugar you normally use and let the sweet taste of Ambrosia apples shine through.
I decided to make an Ambrosia Apple Crumble Tart. We were in the mood for an apple dessert, and it was a toss-up between a pie and a crumble, so I thought, why not combine the two?

I was so pleased with the way that these apples held up in the pie. They held together very well and were not mushy. The flavor of this Ambrosia apple tart was delicious! We had guests over and everyone loved this dessert.
This recipe works well with both gluten free flour blends as well as with spelt flour or all-purpose flour.

Ingredients

For the crust:

  • 1 cup spelt flour*
  • ⅛ teaspoon sea salt
  • ½ Tablespoon sugar
  • ⅓ cup cold vegan buttery spread
  • 3-4 Tablespoons cold water

For the filling:

  • 4 Ambrosia apples peeled and thinly sliced**
  • 2 Tablespoons sugar
  • ¾ teaspoon cinnamon
  • ⅛ teaspoon ginger

For the crumble topping:

  • ½ cup spelt flour*
  • 1 cup certified gluten free oats
  • ⅔ cup light brown sugar
  • ⅛ teaspoon salt
  • ¼ teaspoon cinnamon
  • 6 Tablespoons vegan buttery spread cut into small chunks

Instructions

  1. Make the crust: In a large bowl, combine the spelt flour, salt, and sugar. Add the buttery spread and mix using a pastry cutter.
  2. Add the cold water a little bit at a time and mix until the dough just comes together.
  3. Flatten the dough into a disk and wrap with plastic wrap. Place dough in the freezer for one hour.
  4. Preheat the oven to 350 degrees.
  5. Line a surface with wax paper and sprinkle flour on top. Flour the rolling pin as well. Roll out the dough into a 16 inch circle if you are using a 12 inch tart pan. You can adjust the size of your dough to fit the pan you have.
  6. Put the dough into the tart pan and press it into the sides, removing any excess. Prick the bottom all over with a fork, then bake at 350 degrees for 15 minutes.
  7. While the tart bakes, combine the Ambrosia apples with the cinnamon, ginger, and sugar and set aside.
  8. In a large bowl, place the flour, oats, brown sugar, salt, and cinnamon and mix together. Add the vegan buttery spread and mix using a pastry cutter until the mixture becomes a crumb topping.
  9. Remove the crust from the oven and fill with the apples and then place the crumble on top.
  10. Bake the tart at 350 degrees for about 40 minutes.
  11. Let cool before serving.

Recipe Notes

*I have made both the crust and the topping with gluten free flour - I prefer King Arthur Multi Purpose Gluten Free Flour Blend.

**You can use any variety of apple that you like if you can't get Ambrosia apples.

    Hi Kelly,
I adore Ambrosia apples. What a beautiful tart, wow! I’d like to make it for Thanksgiving this year. Do you think I could substitute oat flour, for the spelt flour?

Thanks so much for your thoughts,

    Kit

I think that could work, but the crust may be a little delicate. But as far as flavor and baking goes, I think it would be fine!

How is this allergy friendly if it uses spelt flour? Any substitution ideas?

If your specific allergy is to wheat, you can do a gf flour. I have made both the crust and the topping with gluten free flour in the past. I have updated the recipe to include that information – I prefer King Arthur GF Multi Purpose Flour, but blends by Bob’s Red Mill or Hodgson Mills should also perform well.

And as it stands, the recipe is nut free, but if you are allergic to wheat but not nuts, you could do a nut flour if that’s your preference.
