This black bean and feta cheese dip is alway s a crowd pleaser. If you have a good-sized crowd, you’ll want to double this recipe because it disappears so quickly. It’s so delicious – just perfect for summer gatherings! The sweet, vinegary dressing is the perfect complement to the salty feta cheese. The black beans are a great source of protein and fiber, too.

Black Bean and Feta Dip.
Ingredients
- 3 Tablespoons sugar
- ¼ cup apple cider vinegar
- ¼ cup olive oil
- 1 cup feta cheese crumbled
- 1 can sweet yellow corn drained and rinsed
- 1 can black beans drained and rinsed
- 1 medium sweet onion chopped
Instructions

Combine all ingredients in a large bowl and refrigerate for at least one hour before serving.

Serve with tortilla chips or Frito Scoops.
This dip is so wonderful, and everyone who eats it just loves it! You could even make it without the cheese, it would still be amazing. If you don’t have black beans, you could try pinto beans or black-eyed peas.
