Savory Roasted Almonds and Pepitas.

Savory almonds and pepitas are a delicious gluten free and vegan snack!

I wanted some spiced nuts the other day, and found that we had almonds and pumpkin seeds in the fridge. I decided to make a little batch of savory roasted almonds and pepitas using the spices that I had on hand here.

These roasted almonds and pepitas were good, so I thought I’d share my recipe with you. These are gluten free, vegan, and fit in with the paleo diet.

Pumpkin seeds are a great source of magnesium, and a nice change from sunflower seeds.

I love to have healthy snacks ready to eat, especially since I’m breastfeeding. When I eat nuts and seeds, at least I know that I’m getting more nutrients than if I were eating crackers or chips.

Savory Roasted Almonds and Pepitas.

A crunchy and spicy nut and seed mix.

Ingredients

  • 1 cup almonds
  • ½ cup pumpkin seeds
  • 1 Tablespoon olive oil
  • 1 teaspoon sea salt
  • ¼ teaspoon pepper
  • ½ teaspoon curry powder
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder

Instructions

  1. Roast the almonds and pepitas on a cookie sheet in a 350 degree oven for about ten minutes. Take them out and let them cool for a few minutes.
  2. Mix the spices in a bowl. I used about 1 teaspoon of sea salt and a ¼ teaspoon of pepper, and ½ teaspoon of the garlic powder, curry and cumin.
  3. Heat about one tablespoon of olive oil in a large pan. Add nuts and stir to coat. Once coated, spoon into the bowl with the spices and toss until they are all covered. Spread on a cookie sheet to cool.

This recipe would work with just about any nuts, and any spices.  You could even go sweet if you wanted to, with some sugar, cinnamon, sea salt, and almonds.  Roasting nuts is very simple and there are lots of ways to be creative. Enjoy!
