Delicious sweet and spicy Chex mix recipe – this flies out of the bowl at parties! A real crowd pleaser!
This has been pretty much my favorite week of recipes, because they are all my favorite things that are so, so easy to make and also very delicious. These are the kind of things that make everyone happy and full and satisfied, and that’s the goal, right? Also, when you have food allergies, not feeling deprived is kind of key, too.
So. I LOVE Chex mix. Really love it. One of my best friends from college would go home on the weekend, and then bring a big bag of her mom’s homemade Chex mix back with her so that we could all share it. Oh my gosh, it was so good. She used pretzels, and all kinds of nuts, and then there was her secret ingredient…Cheddar Cheese Combos. Don’t even look at the ingredients! Ugh..the artificial colors and flavors! Now if one of my little buddies tried to eat a Combo, I would literally dive across the room to stop it from entering their mouth. My, how times have changed.
But, I knew I could make Chex mix fit into our gluten free, dairy free lifestyle, and I was right. I mixed up the spices a little bit, so this version is savory with a little sweetness from the brown sugar. If you have a nut allergy, just leave the nuts out and add more pretzels or cereal. Cheese crackers or seeds are another good addition! If you want it a little spicier, add more cayenne pepper. This is so addictive! If you can’t handle the temptation of a whole batch, it works well to just make a half batch.
- 4 cups corn Chex
- 4 cups rice Chex
- 1½ cups cashews
- 1½ cups gluten free pretzels
- ½ cup vegan buttery spread
- 1½ Tablespoons brown sugar
- 1 Tablespoon paprika
- 1¼ teaspoons salt
- ½ teaspoon pepper
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ¼ - ½ teaspoons cayenne pepper
- Preheat the oven to 250 degrees.
- Pour the Chex, cashews, and pretzels in a very large bowl.
- Melt the vegan buttery spread in a microwave safe bowl. Add the spices to the melted spread, and stir.
- Pour the mixture over the Chex, nuts, and pretzels, and stir well to coat.
- Spread the Chex mix on a cookie sheet and bake at 250 degrees for about 45 minutes, stirring every 15 minutes.
- Let cool completely. Store in an airtight container.
NOTE: When I wrote this post, Chex cereal was a safe vegan cereal according to my information. Readers have informed me that this may not still be the case. I am sorry for any confusion! Some off brands of chex-like cereal may be safe, you will have to do some checking.
