These dairy free easy chocolate ice cream bites are the perfect no-bake dessert for summer! Use your favorite brand of ice cream and sprinkles to make these festive treats.

On a hot summer day, we crave ice cream or popsicles at our house. I have lots of frozen dessert recipes on my site, but this one may be the easiest – you just need two ingredients.
All you need is your favorite brand of dairy free ice cream, and some sprinkles. Or if you can’t find sprinkles that work for your needs, try using coconut flakes or chocolate shavings instead.
You’ll just scoop your ice cream, roll it in some toppings, and pop these back in the freezer. That’s it!

Ingredient Notes
- Dairy Free Ice Cream – Use any brand of ice cream that suits your dietary needs. You can even use homemade ice cream if that’s what works best for you.
- Sprinkles – Use any brand of sprinkles that you like! If you can’t find sprinkles that suit your needs, feel free to use shredded coconut or dairy free chocolate shavings.
Step by Step Instructions
- Scoop out the ice cream using a two tablespoon cookie dough scoop, and roll each scoop in sprinkles.

- Put the sprinkle covered ice cream on a cookie sheet or in a plastic container and place in the freezer to firm up for one hour.

- Once the ice cream is firm, serve and enjoy!

Variations
You could also roll ice cream in gluten free cookie crumbs, like Kinnikinnick K-Toos, or crushed graham crackers. Be creative! I’m sure there are other options that I haven’t thought of yet!

Easy Dairy Free Ice Cream Bites.
Ingredients
- 1 pint dairy free ice cream Use any brand that works for your dietary needs
Toppings:
- 1 cup sprinkles
Instructions
- Line a cookie sheet with waxed paper.
- Set the ice cream out so it softens up a little bit.
- Put the sprinkles in a bowl.
- With a small cookie dough scoop, scoop out a ball of ice cream. Place it in a bowl with a topping and roll until the ice cream is completely covered.
- Place the covered ice cream ball on the cookie sheet. Repeat with remaining ice cream and sprinkles.
- Place the cookie sheet in the freezer and freeze until firm, about an hour.
