We’ve had a crazy couple of weeks here, and I haven’t had as much time or desire to make complicated things for dinner. Actually, who am I kidding, I never have the desire to make complicated things for dinner.
But now that we are having some nicer days, and are outdoors more, I really prefer a simple dinner. We haven’t done a whole lot of grilling yet, because we are having some work done on the patio, but once that gets straightened around, we will be using the grill and that will simplify things even more.
This is a really easy meal to make. We usually have sausage and peppers with brown rice, but this time I decided to do quinoa, and I wanted to jazz it up a little bit so I added some curry powder for a spicier version. We love chicken sausages, and my favorite type right now is the Sun Dried Tomato and Basil Sausages from Coleman Natural. It can be hard to find chicken sausages that are dairy free, but these do not contain dairy, and they are really tasty.
If you don’t like chicken sausage, just use whatever sausage you like. Darryl is a big fan of bratwurst, so he likes to make those from time to time as well.
Sausages with Peppers and Onions over Curry Spiced Quinoa.
- 1 cup uncooked quinoa
- 1 teaspoon olive oil
- 2 teaspoons curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1 package chicken sausages
- olive oil
- 2 sweet onions sliced thin
- 1 red pepper sliced thin
- 1 yellow pepper sliced thin
In a medium saucepan, bring the quinoa, spices, olive oil, and two cups of water to a boil. Reduce heat to low and cover pan. Simmer for 15 minutes until the little ring around each quinoa loosens.
Meanwhile, cook the onions and peppers in a frying pan over medium heat with 2 tablespoons of olive oil. Cook until the vegetables are soft and starting to brown. It takes awhile - about a half an hour. Don't raise the heat too high to hurry it along, they will just burn, and that's no good!
In a separate pan, brown the sausages. Drizzle a little bit of oil in the pan and cook them over medium heat until the casings are browned and crisp.
To serve, put a scoop of quinoa on each plate, then add the peppers and onions and a sausage on top.
