Our refrigerator decided it wants to retire. We knew our old friend was getting tired when the temperature started creeping up in spite of the fact that the knob was turned all the way to “coldest.”
And we can’t have that – it’s salad season! I need ice cold lettuce and cabbage and greens. I also don’t need to get sick from spoiled food. So on Friday morning a new refrigerator will be delivered, and I’m hoping that the new one will be a lot more reliable. I’m excited – a new fridge! (I know I sound like a big nerd, but I love getting new appliances).
Anyway, back to salad season. We were on a big salad kick a couple of weeks ago, and this colorful recipe was Darryl’s favorite.
It’s the perfect salad for a hot day – the romaine lettuce and cabbage is nice and crisp, and the oranges and dressing are refreshingly juicy and sweet. Plus, it’s simple to throw together. The dressing is easy to make, and you just need to chop the lettuce and cabbage. Sectioning the oranges takes a minute, but that’s not difficult at all. If you aren’t sure how to do that, this video is helpful.
- ½ cup orange juice
- ⅓ cup canola oil
- 2 Tablespoons honey or agave nectar
- 1 Tablespoon sesame seeds
- ¾ teaspoon onion powder
- ½ teaspoon salt
- ⅛ teaspoon pepper
- 2 hearts of romaine, sliced
- 1 cup red cabbage, sliced thin
- 5 green onions, chopped
- 3 oranges, peeled and sectioned
- sesame seeds
- Place all the dressing ingredients in a jar with a lid and shake well until combined.
- Place the romaine, red cabbage, and green onions in a large bowl and toss.
- Add the oranges and the dressing and toss to coat.
- Sprinkle additional sesame seeds on top if desired.
