This dairy free frittata recipe is a favorite for breakfast or brunch!
These days, it is a little bit tough to get everyone fed, and to make sure that we are eating healthy food. Sleep is lacking, for sure, and it’s tempting to just grab something that’s not as healthy to eat at mealtime.
But I do have some quick recipes that are healthy and easy to make. One of our favorite quick recipes over here is a frittata.
You can make a frittata so many different ways, but this is our favorite combination right now.
Right now we are sticking to dairy free frittatas, but if you can eat dairy, feel free to throw some cheese in there, or some cream instead of water or non-dairy milk. I find that it’s plenty flavorful without the cheese, but you can customize it according to your preferences! The nice thing about not adding cheese or cream is that it also fits the paleo diet, too.

Favorite Frittata.
Ingredients
- 8 eggs
- 1 potato peeled and diced
- ¼ cup onion chopped
- ½ cup ham diced
- ¾ cup baby spinach
- ¼ cup water or non-dairy mik
Instructions

Preheat oven to 400 degrees. Whisk eggs and water or cream in bowl, season with salt and pepper.

Add all other ingredients and mix. Pour into deep dish pie plate.

Bake for 20 minutes or so, until a toothpick inserted in the middle comes out clean. Enjoy!
I find that frittatas are a very low key option for a brunch or lunch. So little work is involved, and if you use fresh, brightly colored vegetables, it looks pretty, too! Â Pair with a salad, some bread, and some fresh fruit, and you have an elegant spread that’s suitable for company.
