Delicious Vegan Banana Waffles.

Everyone loves to start their weekend with a stack of perfect waffles. These vegan banana waffles are absolutely delicious with crisp edges and a soft and fluffy inside.

The weekend is a good time to enjoy a more leisurely breakfast. Whether you like pancakes, French toast, muffins, or waffles, a cozy, sweet breakfast is a real treat when you have the time to relax and enjoy it.

These vegan banana waffles are a new favorite over at our house. These have a mild banana flavor, a fluffy inside, and a crispy outside. They are just right with some vegan buttery spread and pure maple syrup.

Ingredient Notes

  • Flour – I like to use white spelt flour, which behaves in the same way that all-purpose flour does. You could also use whole wheat flour if you like.
  • Vegan Buttery Spread – We use Earth Balance Soy Free Vegan Buttery Spread – the kind that comes in a tub. You could also use the Original Buttery Spread or the Baking Sticks. If you don’t have that, you can try coconut oil instead.
  • Sugar – I used organic cane sugar for this recipe. Regular granulated sugar would work as well. If you use brown sugar or coconut sugar, the color of the waffles may be a little darker.
  • Bananas – Use very ripe bananas for the best flavor.
  • Baking Powder – Make sure that your baking powder is in date for the best results. Baking powder works really well to make light, fluffy waffles.

Special Equipment

To make waffles, you do need a waffle iron. There are many different varieties of waffle makers on the market today. You can choose the shape – circles, squares, and even hearts. One feature that I like is removable plates – that way you can easily clean them so that they are ready to make the next batch of waffles.

Step by Step Instructions

  1. Melt the vegan buttery spread in a microwave safe bow. Add the banana and mash well to combine.

  1. Add the other ingredients and mix well. Set the batter aside while you prehear the waffle iron.

  1. After about 5 minutes, the batter will have puffed up nicely and should look like the photo below.

  1. Spoon the batter into the hot waffle iron. Cook according to your waffle iron’s instructions.

  1. The waffles should be crisp and golden brown when they are done.

  1. Top with vegan buttery spread and maple syrup or your choice of toppings.

Delicious Vegan Banana Waffles.

Tender, crispy, and so delicious, these vegan banana waffles are just right for a weekend breakfast.

Ingredients

  • â…“ cup vegan buttery spread or coconut oil
  • 1 banana for about a ½ cup mashed banana
  • â…“ cup organic cane sugar
  • 1 ½ cups flour white spelt flour or all-purpose flour works well
  • 1 Tablespoon corn starch
  • 1 ¾ Tablespoons baking powder
  • ¼ teaspoon salt
  • 1 ½ cups water
  • 1 teaspoon white vinegar
  • oil or cooking spray for greasing the waffle iron

Instructions

  1. Preheat the waffle maker.

  2. Melt the vegan buttery spread in a microwave safe bowl. Add the banana and mash with a fork.

  3. Add the sugar, flour, corn starch, baking powder, and salt. Add the water and vinegar, and mix together.

  4. Allow the batter to rise for 5 minutes while the waffle maker heats up. I like to grease the waffle iron to make sure the waffles do not stick.

  5. Spoon the batter into the preheated waffle iron. Cook according to your waffle iron's instructions.

  6. Remove the cooked waffle and place on a plate.

  7. Repeat steps 5 and 6 with remaining batter.

  8. Serve with vegan buttery spread, maple syrup, or powdered sugar.

Recipe Notes

The amount of waffles you will get out of this recipe will vary based on the type of waffle maker you use. I used a Belgian waffle maker.

Based on that waffle maker, the serving size is two quarters of a waffle (one half). These are thick waffles – if you use a different type of maker, the waffles may be thin.

You can store leftover waffles in the refrigerator for up to 4 days.

You can freeze leftover waffles in a freezer bag for up to 3 months.
