This comforting pasta with creamy sun dried tomato sauce, mushrooms, and spinach is full of flavor and color. This easy dish is gluten free, dairy free, and so tasty.

Is there anything better than pasta with creamy sun dried tomato sauce and spinach, mushrooms, and garlic? A big bowl heaped with noodles topped with flavorful sauce…can you say comfort food?
This comforting pasta dish is dairy free, but you would never know it! Sun dried tomatoes add a ton of flavor along with garlic, onion, and white wine.
This cream sauce doesn’t take too long to put together at all, and it can all be done in one pot. Hooray! I think this is a dinner recipe your family will love.
Top Tip
If you are new to gluten free pasta, here’s a tip: Stir the pasta frequently when you are boiling it, otherwise it can stick together and is very hard to separate.
Ingredient Notes
- Sun Dried Tomatoes – You can use jarred sun dried tomatoes, or you can make your own oven dried cherry tomatoes.
- Gluten Free Pasta – Some brands of gluten free pasta to look into are Jovial, Ancient Harvest, and Tinkyada. Most of these brands can be found at Whole Foods, Kroger, or other health food stores.
- White Wine – White wine adds flavor to this sauce, but you could use chicken or vegetable broth if you prefer.
- Vegetables – If you don’t like mushrooms, you can leave them out! Go ahead and add more spinach, or some fresh basil, or even some chopped zucchini if you wish. This dish is delicious, and there is room for variation if you want to make this recipe your own.
Step by Step Instructions
- Cook the gluten free pasta according to package directions.
- While the pasta cooks, make the sauce. Cook the onions and garlic in a large pan, then add the white wine and mushrooms.
- Once the mushrooms and onions are softened, add the gluten free flour blend and stir. Add the sun dried tomatoes and non-dairy milk. Simmer, and stir until the sauce thickens.
- Add the spinach and spices, and cook for a minute or two until the spinach wilts. Serve over hot pasta. Season with more salt and pepper if desired.
Storage
Store leftovers in an airtight container in the refrigerator. They should stay fresh for about 3 days.

Pasta with Creamy Sun Dried Tomato and Mushroom Sauce (Dairy Free, Gluten Free).
Ingredients
- 16 ounces gluten free spaghetti or a different pasta shape of your choice
- 1 medium onion chopped
- 3 garlic cloves minced
- 1 Tablespoon olive oil
- ½ cup white wine
- 2 Tablespoons gluten free flour blend
- ½ cup sun-dried tomatoes or oven-dried
- 2 cups sliced mushrooms
- 1 ½ cups non-dairy milk
- 2 cups spinach leaves
- 1 teaspoon sea salt
- ⅓ teaspoon garlic powder
- ½ teaspoon pepper
Instructions
- Cook the gluten free spaghetti according to package directions.
- While the pasta cookies, make the sauce. In a large pan, cook the onion and garlic in the olive oil over medium heat.
- Once the onion softens, add the white wine and mushrooms, and stir.
- Let the mushrooms cook for a few minutes until they start to soften, then add the gluten free flour blend and stir again.
- Add the oven-dried tomatoes and the non-dairy milk. Stir constantly until the sauce begins to thicken.
- Add the spices and the spinach leaves, and mix together until the spinach wilts.
- Put the spaghetti in bowls, and top with the sauce.
- Add more salt and pepper if desired.

Has anyone tried using coconut milk side? Full fat and taking out the flour?
Otherwise – I make homemade oat milk for my non dairy milk, has anyone tried this? Seems odd for pasta but maybe not!

I think you could do the coconut milk, but it will have a bit of a coconut flavor.

Overall it looks good but way too much vinegar taste I’m not sure but maybe my white vinegar was old or 1/2 Cof it makes the whole dish taste like vinegar I think it’s super healthy next time I’ll try with about 1/4 of vinegar it calls for and I usually like vinegar
