This lemon dill quinoa salad is very easy to make, and it’s full of fresh summer flavor. Dill is a nice surprise with the carrots, and a tangy lemon dressing is the perfect finishing touch.
Make this for yourself or for a potluck or barbecue – you and your guests will love it!

Ingredient Notes
- Quinoa – I used white quinoa in this salad, which is easy to find in any almost store. You could also use red quinoa if that’s what you have on hand.
- Green Onions – I like the flavor of green onions in this recipe, but you could also use finely chopped sweet onion or red onion. You could even try chives if you like.
- Dill – I love the way the dill combines with the lemon in this salad, but if you prefer, you could use fresh parsley or fresh cilantro instead. If you only have dried dill, you can use 2 teaspoons in place of the fresh dill.
Variations
Feel free to add more veggies to this salad. Try adding:
- chopped cucumber
- cherry tomatoes
- chopped green pepper
Step by Step Instructions
- Cook the quinoa and place in a large bowl to cool.
- Chop the carrots, green onions, and fresh dill, and add them to the bowl.
- Place the dressing ingredients in a jar and whisk together.
- Pour the dressing over the salad ingredients and stir to coat. Enjoy!

Lemon Dill Quinoa Salad.
Ingredients
- 1 cup quinoa
- 1 cup water
- ½ cup fresh dill
- 1 bunch green onions chopped
- 1 cup baby carrots sliced thin
Instructions
- Rinse your quinoa thoroughly and put in a pan with one cup water. Bring water to a boil, reduce heat, cover, and let simmer 15-20 minutes, or until all the water is absorbed.
- Put the cooked quinoa in a large bowl to cool.
- While quinoa is cooling, chop the dill, green onions, and carrots. Add them to the cooled quinoa.
- Place the olive oil, lemon juice, garlic, salt, and pepper in a glass jar and whisk together.
- Pour the dressing over the salad, and stir to coat everything. Add more salt and pepper as needed. Enjoy!

Kelly…… Will the dressing still work if I can’t have the garlic? I’m allergic to garlic and onion so would have to leave the onion out of the recipe too. :( My allergy combo’s are so hard. I struggle daily with how to season things. I appreciate you blog.

Just found your blog and am enjoying it! I just prepared quinoa last night with a recipe we really enjoy. Prepare the quinoa with broth instead of water for more flavor. Sauté onions and peppers then add a can of any kind of tomatoes or chop a few fresh. Add a can of beans either red or black and include your own seasonings of chili powder, garlic, pepper, salt, etc. to your taste. We like it spicy so add hotter peppers or chilies as you like. Simmer down the vegetables and serve over the quinoa. It is so quick and yummy! Thanks for your recipes and sharing your family!

We recently discovered quinoa and I mainly use it as an addition to steamed carrots vegetables. I’ve noticed that it’s best with garlic, so I make sure to crush a clove each time. I will most certainly try this recipe because just like Meeling I love dill, especially fresh one!
