This apple cinnamon chia seed pudding is a wonderfully filling breakfast that you can make ahead of time! Warm apples and cranberries in cinnamon sugar are the perfect topping for protein rich chia pudding.

I love to have simple, tasty breakfast recipes I can rely on. When we are rushing around in the morning, if I haven’t planned ahead, I wind up just grabbing cookies or something. Not the best option.
Chia seed pudding is a great breakfast choice – you can make it the night before and simply top it with whatever you like the next morning. It’s delicious and filling, and I find that it’s a great base for lots of different flavors.
If you’re a person who enjoys overnight oats, you might like to try chia pudding for a change! It’s similar in that you can make it ahead of time and top it with anything you like, but the texture is different, so it will give you a little variety in the mornings.

Ingredient Notes
- Chia Seeds – You can use black chia seeds or white chia seeds. Either will work well. I use whole chia seeds, but if you don’t like the texture of them, you can grind them up to make a smoother pudding. Check out my recipe for creamy chocolate chia pudding to see what that looks like.
- Non-Dairy Milk – Use any non-dairy milk that works for your dietary needs. Some good choices would be coconut milk, oat milk, rice milk, soy milk, or any other variety that you like.
- Sweetener – I used maple syrup to sweeten this pudding. You could use honey or agave syrup if you prefer.
- Apples – You can use any variety of apple that you like. We usually have Honeycrisp or Fuji apples at our house, so that’s what I use.
Variations
- You could make this topping with pears instead of apples. You could also add some sunflower seeds or pumpkin seeds for a little crunch.
- If you are able to eat nuts, you can add some nuts as well.
- Homemade granola would also be a great way to top this pudding off.

Storage
You can store leftover chia pudding in the refrigerator in a Mason jar or another airtight container. It should stay fresh for about 4 days.

Apple Cinnamon Chia Seed Pudding.
Ingredients
For the pudding:
- 1 cup non-dairy milk any non-dairy milk you like should work well
- 3 Tablespoons maple syrup
- 1 teaspoon vanilla extract
- 5 ½ Tablespoons chia seeds
For the topping:
- 2 apples peeled and diced
- ½ teaspoon cinnamon
- 1 Tablespoon vegan buttery spread
- ½ Tablespoon brown sugar
- ¼ cup dried cranberries optional
Instructions
- In a medium sized container, combine the non-dairy milk, maple syrup, vanilla extract, and chia seeds, and stir well. Cover and refrigerate overnight.
- The next morning, place the diced apples, cinnamon, vegan buttery spread, brown sugar, and dried cranberries in a small skillet and cook over medium heat for about 7 minutes or until apples are tender.
- Spoon the chia seed pudding into bowls and top with the apple mixture. Enjoy!
