How do you usually start your day? In a rush with no time to eat? Or hopefully with time for a nice filling breakfast?
I love to have simple, tasty breakfast recipes I can rely on. When we are rushing around in the morning, if I haven’t planned ahead, I wind up just grabbing cookies or something. Not the best option. When I know that I have a really busy day coming up, I make sure to plan what we will eat in the morning, and what food we will have to pack to take along on for our day as well. Taking a few minutes to make a plan the night before makes our mornings so much smoother.
Chia seed pudding is a great breakfast choice – you can make it the night before and simply top it with whatever you like the next morning. It’s delicious and filling, and I find that it’s a great base for lots of different flavors. It’s a great dairy free breakfast, too – it works really well with non-dairy milk. This time I used Silk Original Soy Milk, but I love to use Silk Coconut Milk, too. Both products make a really creamy and delicious base for chia seed pudding.
In fact, we rely on chia seed pudding and oatmeal pretty regularly for breakfast. I love to do different toppings each day so that we don’t get bored.
One way to stock up on natural foods that are great for breakfast, lunch, and dinner is to shop at the Natural Foods Department at Kroger. I shop at my Kroger all the time for so many of the ingredients that I like to keep in stock in my kitchen. The Kroger Natural Foods Department has a growing selection of gluten free, dairy free, and vegan food items, all available at a great price. Buying natural, whole foods doesn’t have to be expensive. Apple Cinnamon Chia Seed Pudding.
For the pudding
- 1 cup Silk Original Soy Milk Silk Coconut Milk would also be fine
- 3 Tablespoons maple syrup
- 1 teaspoon vanilla extract
- 5 1/2 Tablespoons Simple Truth chia seeds
For the topping
- 2 apples peeled and diced
- 1/2 teaspoon cinnamon
- 1 Tablespoon vegan buttery spread
- 1/2 Tablespoon brown sugar
- 1/4 cup dried cranberries optional
In a medium sized container, combine the Silk soy milk, maple syrup, vanilla extract, and chia seeds, and stir well. Cover and refrigerate overnight.
The next morning, place the diced apples, cinnamon, vegan buttery spread, brown sugar, and dried cranberries in a small skillet and cook over medium heat for about 7 minutes or until apples are tender.
Spoon the chia seed pudding into bowls and top with the apple mixture. Enjoy!
