Ingredient Notes
- Rice – I used Jasmine rice, but you can use a different long grain white rice if you prefer. You will need to cook the rice before adding it to the casserole.
- Ground Beef – You can use ground round in this dish, or you could use ground turkey. Both will work well! If you use ground turkey, be sure to use 85% lean. Any leaner than that and the turkey will be too dry.
- Breadcrumbs – I like to make my own garlic breadcrumbs with leftover bread. It’s easy to do, and that way you know that they are safe for your dietary needs.
Step by Step Instructions
- Cook the ground beef or ground turkey in olive oil along with the chopped onion, green pepper, and garlic.

- Add the cooked rice to the pan.

- Add the seasonings, dairy free cheese, and broth.

- Put the mixture in a 9×13 casserole dish and cover with foil. Bake at 375 degrees F for about 35 minutes.

- Remove the foil and top with the garlic breadcrumbs. Bake for an additional 10 minutes at 375 degrees.

- Allow the casserole to cool slightly, then enjoy!

Storage/Freezing
Store leftovers in the refrigerator. They should stay fresh for about 3 days.
You can freeze leftover hamburger rice casserole if you like. Store portions in freezer safe containers, and thaw before reheating. Leftovers should stay fresh in the freezer for up to 3 months.
