Quick and Easy Green Herb Sauce.

This simple green sauce made from fresh herbs, garlic, and lemon is a wonderful addition to just about anything! Serve this versatile sauce with fish, chicken, over roasted potatoes, or even use it as a salad dressing.

If you’ve recently cut out some ingredients from your diet, you might be feeling a little deprived. When you’re used to eating certain foods, and then those foods are no longer available to you, it’s easy to start to feel like you are in a recipe rut.

Whether it’s eliminating dairy, or maybe sesame, mustard, or gluten, you often have to get creative and come up with new flavors to satisfy your taste buds.

This simple green sauce is my solution to the flavor problem! It’s made with fresh herbs, garlic, fresh lemon juice, and olive oil. It’s kind of like a chimichurri sauce, but with less ingredients, and no spicy peppers.

Herbs

I usually make this sauce with fresh parsley and fresh basil or cilantro. You can easily use different herbs or greens if you want to experiment.

You could use oregano, mint, or even arugula if you like. I prefer the flat leaf Italian parsley to the curly parsley, but you could use whatever you have.

Substitutions

There are lots of ways to alter this green sauce recipe based on your allergens or preferences.

  • you can use lime instead of lemon
  • you can use vinegar instead of lemon juice
  • you could use shallots or chives instead of garlic cloves
  • use the choice of herbs that you prefer

Special Equipment

I like to use a mini food processor for making this sauce. It seems to do the trick really quickly. If you are making a double batch or more of this recipe, you may want to use a regular size food processor.

Once you’ve assembled your ingredients, just throw them in the food processor and give it a whirl. You’ll have a fresh and flavorful green sauce in no time.

Storage

You can store any leftover sauce in an airtight container in the refrigerator for a couple of days, but I have a feeling it won’t last that long! It’s delicious and we never have any leftovers.

Ingredients

  • 3 garlic cloves peeled
  • 1 cup fresh parsley leaves
  • 1 cup fresh basil leaves or fresh cilantro
  • 3 Tablespoons fresh lemon juice
  • ½ cup olive oil
  • salt Optional, to taste. Try a ¼ teaspoon.

Instructions

  1. Place the garlic cloves, parsley and basil leaves, lemon juice, olive oil, and salt in a mini food processor.

  2. Process on high speed until blended.

  3. Add more lemon juice or salt if desired.

  4. Serve with fish, chicken, roasted vegetables, or whatever you wish!

Recipe Notes

You can use different herbs if you like. Try cilantro or mint.

Store leftovers in the refrigerator for a couple of days.

Serving size is about 2- 3 Tablespoons.
