If you’ve recently cut out some ingredients from your diet, you might be feeling a little deprived. When you’re used to eating certain things, and then those things aren’t available anymore, it’s easy to start to feel like you are in a recipe rut.
Whether it’s eliminating dairy, or maybe sesame, mustard, or gluten, you often have to get creative and come up with new flavors to satisfy your taste buds.
This simple green sauce is my solution to the flavor problem! It’s made with fresh herbs, garlic, fresh lemon juice, and olive oil. It’s kind of like a chimichurri sauce, but with less ingredients, and no spicy peppers.
Can I substitute different fresh herbs in this green sauce?
Yes, you can use different herbs if you like! I usually make this sauce with fresh parsley and fresh basil or cilantro. You could use oregano or even arugula if you like. I prefer the flat leaf Italian parsley to the curly parsley, but you could use whatever you have.
There are lots of ways to alter this green sauce recipe based on your allergens or preferences.
Some ideas for substitutions:
- you can use lime instead of lemon
- you can use vinegar instead of lemon juice
- you could use shallots or chives instead of garlic cloves
- use the choice of herbs that you prefer
Once you’ve assembled your ingredients, just throw them in the food processor and give it a whirl. You’ll have a fresh and flavorful green sauce in no time.
I like to use a mini chopper for making this sauce. It seems to do the trick really quickly. If you are making a double batch or more of this recipe, you may want to use a regular size food processor.
You can store any leftover sauce in the refrigerator for a couple of days, but I have a feeling it won’t last that long! It’s delicious and we never have any leftovers.

Fresh herbs, lemon, garlic, and olive oil make a delicious and versatile green sauce! This is a vibrant addition to salads, soups, and roasted meat!
- 3 garlic cloves peeled
- 1 cup fresh parsley leaves
- 1 cup fresh basil leaves or fresh cilantro
- 3 Tablespoons fresh lemon juice
- ½ cup olive oil
- salt Optional, to taste. Try a ¼ teaspoon.
Place the garlic cloves, parsley and basil leaves, lemon juice, olive oil, and salt in a mini food processor.
Process on high speed until blended.
Add more lemon juice or salt if desired.
Serve with fish, chicken, or whatever you wish!
Store leftovers in the refrigerator for a couple of days.
Serving size is about 2- 3 Tablespoons.
