In the mood for chili, but need to skip the beans? Try this recipe for hearty, tasty beef chili! It’s full of flavor and texture, but completely bean free!
Chili is one of my favorite easy gluten free, dairy free dinner recipes. It’s easy to make in one pot, it’s hearty, filling, and you can round out the meal with something simple like cornbread.
If you have a legume allergy, you know that many chili recipes contain beans. And they’re usually a main ingredient! I find that if you just take a regular chili recipe and remove the beans, sometimes what’s left is lacking.
That’s why I want to share my bean free beef chili recipe – it’s full of lots of delicious ingredients, and you won’t miss the beans at all! Potatoes, zucchini, carrots, ground beef…this recipe has it all.

Ingredient Notes
- Ground Beef – I recommend using ground round for the best flavor. If you use ground sirloin it might be a little bit too dry.
- Potatoes – I like Yukon Gold potatoes in this recipe, but you could use red skin potatoes or a different variety if you prefer.
- Broth – Vegetable broth or chicken broth is a good choice for this chili. Use any brand that works for your dietary needs.
- Spices – Garlic powder, chili powder, and smoked paprika add lots of flavor to this recipe.
Substitutions
- If you can’t eat potatoes, try sweet potatoes or diced butternut squash.
- Instead of zucchini, you could use green peppers.
- If you don’t want to use ground beef, try ground turkey.
Step by Step Instructions
- Cook the onions, garlic, and ground beef in olive oil.
- Add the potatoes, zucchini, and carrots.
- Add the broth, tomato paste, and spices to the pot.
- Bring to a boil, then reduce to a simmer. Cook for about 20 minutes, until the vegetables are tender.
- Serve right away with crackers or bread if desired. Enjoy!
Storage
Store leftovers in the refrigerator. They should stay fresh for about 4 days.

The Easiest No Bean Beef Chili.
Ingredients
- 1 Tablespoon olive oil
- 1 onion chopped
- 2 garlic cloves minced
- 1 pound ground round 85% lean
- 3 Yukon Gold potatoes diced (about 2 cups)
- 3 carrots peeled and sliced
- 1 zucchini chopped
- 32 ounces vegetable broth or chicken broth
- 2 Tablespoons tomato paste
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Place the olive oil, chopped onion, and minced garlic in a soup pot over medium heat. Cook for a few minutes, then add the ground round.
- Cook until the beef is browned and cooked through, then add the potatoes, carrots, and zucchini to the pot.
- Add the broth, tomato paste, and spices to the pot. Raise the heat to high, and bring to a boil, then reduce to a simmer.
- Cook the chili for 20-25 minutes, until the vegetables are tender.
- Serve with crackers or bread. Enjoy!
