If you love veggies, try this bowl! It’s loaded with spinach, sweet potatoes, lentils, and wild rice. This is a hearty lunch or dinner recipe.

I love roasting vegetables – from roasted sweet potatoes to brussels sprouts, to garlic roasted broccoli, that’s my favorite way to prepare veggies.
Taking roasted sweet potatoes and adding lentils, spinach, and rice resulted in a bowl that was both delicious and beautiful. This was a tasty lunch!
It does take a little bit of time to prepare the rice and lentils, and to roast the sweet potatoes. But the good news is that everything can cook at the same time, and you could easily make larger amounts of all the ingredients and have it ready to go for the week.
I think you’ll love this bowl, whether you eat it for lunch or dinner!

Substitutions
- If you want to use a different variety of lentil, you can do that! French green lentils or black lentils would both work well.
- If you’d rather use a different type of rice, go ahead! Basmati rice or brown rice would be great.
- Roasted carrots would be a good substitution for the sweet potatoes if you prefer.

Recipe

Veggie Power Bowl with Lentils and Sweet Potatoes.
Ingredients
- 2 Tablespoons extra virgin olive oil
- 1 sweet onion sliced
- 2 sweet potatoes peeled and diced
- 2 teaspoons cumin
- ½ cup green lentils picked over and rinsed
- â…” cups wild rice blend
- 6 cups baby spinach
- 1 clove garlic minced
- 3 Tablespoons sunflower seeds
- salt and pepper to taste
Instructions
- Preheat the oven to 425 degrees F. Put the sweet potatoes, onions, cumin, and olive oil in a baking dish and toss to coat everything with oil. Bake for about 45 minutes, stirring occasionally. They should be tender and slightly browned on the edges when done.
- While the sweet potatoes bake, cook the wild rice according to package directions.
- Place the lentils in a pan and cover with one inch of water. Bring to a boil, then reduce heat to a simmer and cook until tender, about 30 minutes. Drain the water out and season with salt and pepper.
- Once the lentils and rice are done, put the spinach, minced garlic, and a drizzle of olive oil in a pan and cook for a few minutes until wilted but still bright green.
- Place some wild rice, lentils, sweet potatoes and onion, and spinach in each bowl. Top with sunflower seeds and season with salt and pepper.
