It’s been a busy and strange week here with workmen here ripping out our kitchen and living room floors, lots of high-speed fans blowing, and just general chaos. I am still blown away by how much damage water can cause, but of course I am so grateful that it wasn’t worse! This is inconvenient for sure, but this too shall pass. :)
With everything all torn up here, we have been eating pretty simply. I’m grateful for a blender to make healthy smoothies, and I’m glad that my oven is still hooked up so I can make things like granola and breakfast cookies. We also made a run to Chipotle and PF Chang’s as well…not complaining about that! :)
I haven’t had as much time to sit down and edit photos this week, so some of the recipes I planned to share will be pushed back to next week. But, I’ve been meaning to share this simple yogurt parfait for a while, and today is a good day for it!
I get into a little breakfast rut sometimes, and this simple parfait is a nice way to get out of it. I love to make my own granola, so I used my Buttery Coconut Granola for this fruit and yogurt parfait, but you can use any granola that you like.
Since we are dairy free, I prefer to use SO Delicious Vanilla Coconut Milk Yogurt. There are a lot of dairy free yogurt options out there, but the SO Delicious brand is what works for us.
Simple Fruit and Yogurt Parfait.
An easy and colorful breakfast recipe - simple granola, fruit, and yogurt, parfaits.
- 6 ounces non-dairy vanilla yogurt
- 1/2 cup blueberries
- 1/2 cup pineapple diced
- 1/2 cup buttery coconut granola
- Layer ingredients as you like in a wine glass or sundae cup.
I know this is such an easy recipe, and maybe it’s too simple, but I know I’m not the only one to get into a breakfast rut now and then!
