Did you know that it’s easy to make awesome cookies without eggs? We eliminated eggs from our diet many years ago due to my youngest son’s allergy. He outgrew that particular allergy, but I still bake without eggs!
Why do I skip this ingredient when baking? Well, it’s just easier to do without them for many recipes. And with eggs being more expensive these days, it makes sense to continue to bake more eggless desserts. We love egg free chocolate cake and vegan applesauce muffins.
I make cookies pretty often and bring them to events at our church or to family gatherings, and no one ever guesses that they are egg free! In fact, I find that most people rave about the cookies we share.

Egg Replacers
There are a lot of options as far as egg replacers go. I like to keep it simple, and use unsweetened applesauce, mashed banana, and the occasional flax seed egg. All of these options work very well, and are usually in my pantry, so I don’t have a need to purchase a powdered egg replacer.

This is so wonderful to have all these in one place. I’ll be saving these in my archives, for when my family comes. With my rice allergy, I can’t use the gluten free flours, so rarely do I get a cookie. I have tried some with other type flours or flourless recipes, but they are either too heavy, grainy or leave weird taste in my mouth. Baking gluten, and dairy free still provides a challenge to me. I’m happy I’ve been able to add egg back into my diet, but still bake without when family comes. I’m glad you have it figure out for your family.
