Easy Blueberry Butter.

For some reason, when I start one project, I start all the projects. Do you do this, too?

Replacing the curtains leads to painting the wall, then fixing the ceiling in a bedroom leads to pretty much redecorating the whole thing.

The next thing you know, you’re at IKEA trying to stuff a shelf, extra long curtain rods, and $200 worth of “necessities” into the back of your car.

Anyway, in the midst of all this home improvement, I felt the need for some biscuits with blueberry butter.

Simply delicious blueberry butter made with just 3 ingredients!

And since it’s such a pretty color, and it’s so delicious, I knew I had to share it with you. It’s ridiculously easy to make, but it really does add something special to your breakfast or brunch. You just blend butter or vegan buttery spread, blueberries, and a little sugar in the food processor until smooth. That’s it! Then serve it with warm bread or biscuits – it’s really heavenly.

You can make this work for your dietary needs – we use vegan buttery spread, but of course regular butter works, too!

Ingredients

  • ½ cup vegan buttery spread or butter if you are not dairy free
  • ¼ cup blueberries fresh or frozen
  • ½ Tablespoon organic cane sugar or sweetener of your choice

Instructions

  1. Place all ingredients in a food processor.
  2. Blend until smooth and combined.
  3. Store in the refrigerator until ready to serve.

    I followed the recipe, and put everything into a food processor, but the butter did not turn out good!
